WTF do you do with an orange cauliflower?

So when I set out to cook today I had no idea that I wold be blogging about it! It was just your typical Sunday cooking for the week kind of day and then... What to do with this orange cauliflower I got from my Bountiful Baskets this week. As I was browsing my many cookbooks I came across a Whole Wheat Spaghetti with Cauliflower and feta recipe and had an ah-ha moment! "I could use this for the orange cauliflower" That's where the yumminess began!

3 tablespoons olive oil
1 onion chopped
4 cloves of garlic minced
1 head of cauliflower cut into bite-sized florets
1 tablespoons salt
1/2 teaspoon black pepper
2/3 cup white wine or water
1/2 package whole wheat spaghetti
1 pint grape tomatoes cut into halves
1/2 cup coarsely chopped walnuts
1/4 teaspoon crushed red pepper
1/2 cup crumbled feta

Okay so thats what the recipe called for but I was feeling extra lazy today so I decided to use what was in the house. Everything is the same except:

Orange Cauliflower for the cauliflower
Cooking white wine for the white wine (not sure if there is a difference here)
3 Roma tomatoes for the grape
Pumpkin seeds for the walnuts (tip: use more pumpkin seeds, I wish I would have!)
goat cheese for the feta
I added Italian parsley because I can!

heat the oil in a large skillet over a medium heat; (here's what I have learned, heat pan, add oil, heat oil, then add the other stuff you are cooking) cook onion for 3 minutes, add garlic; cook for 2 minutes or so. Add cauliflower, cook and stir for 5 to 7 minutes, season with salt and pepper and wine and cook for 10 to 15 minutes until cauliflower is soft.

meanwhile back at the ranch, cook the pasta according to the package directions drain and reserve 1/2 cup of the pasta water. set pasta aside

add the tomatoes, pasta water, and seeds to the veggies and cook until the tomatoes begin to soften.

Toss the pasta with the veggie sauce and add the cheese, serve to your friends and family and they will be raving at you culinary skill

  1. okay so i am sure that you could have figured out this one but for the tomatoes, cut them up!

  2. Wow! I am inpressed. I also go to the grocery- Whole Foods - bring home random fruits and veggies. I love unusual things like sunchokes, celery roon, rainbow swiss chard etc. It is so much fun! I will follow you.
